The wonderful news about
Microgreens is that most varieties
tend to be rich in:
potassium, iron, zinc, magnesiu m
and other vitamins.
They are a rich source of polyphenols,
a class of antioxidants that have been linked to lowering the risk
of heart disease.
Microgreens may also lower risk of Alzheimer's disease.
Antioxidant rich fruits and vegetables, especially those rich in polyphenols, may lower risk of various types of cancer.  Polyphenol-rich microgreens
may have similar effects.
